About The Event

Join us at the Kitchen at Cooper's for our second 5 course wine dinner hosted by Halter Ranch Vineyard with Chef Kelly Hightower preparing the evenings meal. Don't miss our on the first wine dinner of 2019. Meet our sommelier Selena Dodge and Halter Ranch Vineyards estate manager as each wine and course is served. The history of Halter Ranch Vineyard dates to the 1880′s, when the ranch was part of a 3,600-acre holding owned by businessman Edwin Smith.


Course One: King Crab, Avocado, Texas Grapefruit, Arugula, and White Soy Vinaigrette Salad paired with Halter Ranch Grenache Blanc, 2015.

Course Two: Pan Roasted Quail Stuffed with Spanish Chorizo, Rice and Medjool Dates paired with Halter Ranch Cotes de Paso Rouge, 2016.

Course Three: Grilled Elk Chop with Crispy Sunchokes, Wilted Winter Greens and Huckleberry Gastric paired with Halter Ranch Synthesis, 2016.

Course Four: Cast Iron Roasted Akaushi Tenderloin, Herbed Baby Potatoes and Bordelaise Sauce paired with Halter Ranch Ancestor, 2015.

Course Five: Cabernet Infused Chocolate Truffles with Almond Brittle paired with Halter Ranch Cabernet Sauvignon, 2016.
